Zone 7 is a bonsai grower's paradise. Winters dip to 0°F at worst, which provides the dormancy period temperate trees need without requiring much winter protection. Nearly every classic bonsai species thrives here, from Japanese maples and pines to azaleas and elms.

The mild winters also mean some subtropical species can survive outdoors with minimal protection. Certain cold-hardy fig varieties handle Zone 7 winters in a sheltered spot, and pomegranate pulls through if you overwinter the pot in an unheated garage or shed — olive, though, needs a frost-free spot like a garage or cool greenhouse and isn't a safe bet outdoors here. Your growing season stretches seven months or more, giving trees a long runway for development.

Summer heat can be the bigger challenge in Zone 7 — many areas in this zone see consistent 90°F+ days. Japanese maples and other thin-leaved species benefit from afternoon shade during July and August. Watering frequency increases significantly in summer, sometimes requiring twice-daily checks for trees in small pots.
